Offering from the Optimum Health Institute-San Diego







I had the pleasure of spending a week at the Optimum Health Institute. It was a terrific experience-watermelon, raw food, wheat grass, rejuvelac, exercise, yoga, lectures twice a day on nutrition and care of our bodies, a warm swimming pool, and massage. Oh, did I mention a colonic. That was different and not bad at all.

Are you prepared for a raw food recipe offered by the Institute? Well, if you like sushi.

Nori Rolls-

Ingredients: 5 Nori sheets
1.3 0z. seed cheese
.9 oz. Carrots, shredded
1 oz. Celery, diced
.5 oz. Alfalfa sprouts
.5 oz. Buckwheat sprouts
1 Red pepper, julienne sliced
1.4 oz. Cucumber, Pine nuts, finely chopped

Directions:
Spread seed cheese on nori sheet, then layer with carrots, celery, alfalfa sprouts, red peppers, cucumber. Roll carefully to keep ingredients from spilling out. Cut into 6 pieces.
