Vegans-Instead of Dairy

Dairy free bliss!!
1 cups cow's milk 1 cup fortified soymilk or grain milk
1 cup buttermilk 1 cup soymilk plus 2 tsp .lemon juice or white vinegar
1 cup yogurt 1 cup soy yogurt
1 oz. cheese 1 oz of casein-free soy cheese
1 cup cottage cheese (in recipes) 1 cup mashed tofu (drained medium works well)
1/2 cup cream cheese ( 4 0z.) 1/2 cup soy cream cheese (4 oz.)
1 cup ricotta cheese ( as in lasagne) 1 cup mashed tofu (firm works well)
1 cup ice cream 1 cup frozen soy or rice desert, vegan fruit sherbet,
or sorbet
