break the fast VEGAN style


Listed are some vegan offerings for breakfast. I will also offer descriptions and nutritional information about some of the foods listed, because some of these foods may not sound familiar.

Meal 1: Soft rice cereal, fried tofu, steamed broccoli and bancha tea. Correctly named kukicha, bancha consists of the twigs and leaves from mature Japanese tea bushes. Bancha aids digestion, is high in calcium, and contains no chemical dyes.

Meal 2: Miso soup, whole oats with raisins, steamed Chinese cabbage, gomashio, and bancha tea. Miso is a protein-rich fermented soybean paste made from ingredients such as soybeans, barley, and brown or white rice. Miso is used in soup stocks and as a seasoning. When consumed on a regular basis, it aids circulation and digestion. Gomashio is also known as sesame salt. Gomashio is a table condiment made from roasted, ground sesame seeds and sea salt. It is good sprinkled on brown rice and other whole grains.

Menu 3: Buckwheat pancakes, applesauce, steamed Cabbage, onion pickles, and bancha tea.

To prepare onion pickles: 1 medium onion cut into thick half-moon-about 2 cups
a cup water 1/2 cup tamari

Place all ingredients in a pickle press. Place top on pickle press and apply just enough pressure to hold onions under the tamari-water solution. Leave pickles for 1-2 days; the longer they sit, the saltier they will become. If they become too salty, rinse under cold water before eating. These pickles will keep for about 1 week in a cool place.
