A typical day's menu for a Vegetarian might look like this:
morning: 8 oz fresh squeezed orange juice
1/2 cantaloupe or papaya
3 oz cereal with choice of banana, pear, apple, strawberries, or blueberries
1/2 cup of milk-soy, rice, almond.
noon: 2/3 cup rice
1/4 cup cooked beans such as mung, pinto, lentils, etc.
2/3 cup cooked green vegetable such as spinach, kale, broccoli, string beans, with 2 or
3 one inch cubes of paneer
1 whole-wheat pita toasted and lightly buttered (organic butter)
a green salad with yogurt dressing.
snack: 8 oz fresh juice as in carrot-apple
dinner: 8 ounces spinach soup made with milk, onions, mushrooms, carrots, and spinach
blended together
1 piece lightly buttered whole-grain toast
1 cup of fresh, diced fruit as in pear and honeydew, with whipped paneer topping
High Fiber Diet-Unrefined foods such as whole grains, vegetables, and fruit, make up the bulk of the high-fiber diet. Cutting out processed foods means a reduced intake of sugar and saturated fats. Use herbs and spices liberally to flavor high-fiber legume dishes. Mix fresh herbs such as dandelions, coriander, and nasturtium leaves with raw vegetables to make unusual salads.
morning: Home-made, sugar-free granola with dried fruit
lunch: Baked potato with low fat cottage cheese and chives and parsley
crunchy coleslaw
dinner: Chili with tofu or non meat substitute, garlic and peppers, brown rice, green salad with
fresh herbs, fresh fruit.

lunch: Chapatis and spiced dahl. Samosas. Gujerati carrot salad.
Gujerati carrot salad; In a medium serving bowl toss together 2 cups of grated carrots, and 1/2 cup salted peanuts. In a separate bowl whisk together 3 tbsp lemon juice, 1/2 tsp salt, 1 tsp sugar, 1 green chili pepper seeded and diced, and 2 tbsp finely chopped cilantro. Pour over carrots and stir gently to coat and then serve immediately.
dinner: Curried chick peas and dahl. Spiced spinach with ginger and coriander. Creamed
almonds with saffron and cardamom.
drinks: Lassi (yogurt drink) Fresh lime soda with mint.
Macrobiotic Diet-The philosophy behind macrobiotics is the balancing of yin and yang foods, which are opposite in nature but complementary. Yin foods, generally cooling, tend to grow above ground in spring and summer, and be aromatic; yang food, generally warming, tend to ripen later, often below ground, and be less aromatic. Brown rice is the purest, most balanced food and whole cereal grains usually make up a large proportion of the diet. Herbs are usually yin foods, and chives, parsley, ginger and mustard are used liberally. Strong, salty flavors are yang.

lunch: Poached white fish with shoyu and ginger, or whole grain vegetable patties, or fried
udon and vegetables. Brown rice, Cucumber and seaweed salad, Stewed fresh apple
dinner: Miso soup, Sourdough bread, Rice with roasted pumpkin seeds, and steamed green
vegetables
drinks: Twig or stem tea; mu tea, bancha tea, grain or cereal coffee, apple or vegetable juices.
