Pan-Steamed Zucchini and Yellow Squash Noodles-

one and one-half pounds zucchini
one and one-half pounds yellow squash
1- tsp butter
one- half ounce minced shallots
one- half tsp minced garlic
one- fourth cup vegetable stock
1- tbsp minced herbs-basil, tarragon, chives, cilantro, thyme, or oregano
two -tsp fresh lemon juice
one- fourth tsp cracked black peppercorns
1. Cut the zucchini and squash lengthwise into one-fourth inch thick 'noodles.'
Discard the center of the squashes.
2. Heat the butter in a large saute pan. Add the shallots and garlic. Sweat until the shallots are
translucent. Add the squash noodles and stock. Cover and pan-steam the squash until tender, about 5 minutes. Drain any excess liquid. Season with herbs, lemon juice and pepper.
Nutrition Information-batch yield: two pounds. Serving: 10
Nutrition per serving: 27 calories, 1 g fat, 5 g total carbohydrate, 2 g protein, 14 mg sodium, 1 mg cholesterol.
