Condiments and Seasonings

Miso is fermented soybean paste made from soybeans, sea salt, and, sometimes, combinations of whole grains, seasonings, or sea vegetables. Miso is available in many different colors and degrees of saltiness. In addition to being a good source of sodium, it is an excellent source of easily digested protein. In general, miso is rich in live enzymes that aid digestion and promote bowel health.

There remains some confusion between real tamari and tamari soy sauce. Real tamari isn't soy sauce tall, but rather the liquid drained off in the process of making miso. A small amount of real tamari can be used on occasion in place of tamari soy sauce. Real tamari is thicker and stronger in color and flavor, and is slightly more expensive than tamari soy sauce.

Tamari soy sauce is made from soybeans and wheat, without additives or preservatives. Like miso, real tamari and tamari soy sauce are salty-tasting and flavorful. make sure the tamari soy sauce you buy is natural, as the ordinary soy sauce sold in supermarkets, and served in restaurants, generally contains corn syrup, artificial coloring, and preservatives.
