Moving on to our Christmas and Hanukkah festivities. There are so many temptations at our social gatherings with the abundance of food around us. Let's set some attainable goals for ourselves. Trying to maintain our weight rather than lose weight may be a realistic goal during a time of frequent parties.
Consider the following suggestions to exercise control over what we eat:
When You Cook...
.Saute vegetables in liquid, not oil. Use broth, juice, wine, or water.
.Roast or grill vegetables.
.Top a cake with a fruit puree instead of frosting.
.Use graham cracker crusts instead of flaky pastry shells, which are high in fat.
.Substitute low-fat, skin, and non-fat dairy products, or use soy, almond, hemp, or rice milk.
.Whip chilled evaporated skim milk with a touch of sugar for a low-calorie creamy topping.
.Use two egg whites in place of one whole egg in breads, cookies, puddings, and other recipes that call for whole eggs or use cholesterol-free liquid egg product in place of whole eggs. Or, use 2-4 Tbsp soft tofu, or 1 Tbsp ground flaxseed mixed with 3 Tbsp water, or 1/4 cup mashed, very ripe banana or applesauce, or 1 tsp EnerG "Egg Replacer," for baking, or 1/8 teaspoon baking powder mixed with dry ingredients, to replace leavening action of 1 egg or egg white in baking.
Instead of Sugar:
.Substitute a cup of white sugar with 2/3 to 1 cup dried cane juice granules
.Substitute 1 cup of brown sugar with 1/4 cup blackstrap molasses plus 1/2 cup sweet molasses
.Substitute 3/4 cup of honey with 1 to 1 1/2 cups barley malt syrup or rice syrup (or to taste; these are less sweet)
