Nutritional Yeast and Miso

Nutritional yeast is a staple that will "cheese" up dishes while providing daily recommended doses of B vitamins.  An excellent source of vitamin B12  (Red Star), and protein, nutritional yeast is a primary cultured yeast grown on sugarcane and beat molasses.  It does not have leavening power.

On its own, it tastes nutty and cheesy and is delicious sprinkled on popcorn  When combined into recipes like hummus, pasta sauce, stews, and pizza, nutritional yeast lends a lovely flavor and huge nutrient boost. 

You can find nutritional yeast at your local health food stores.

Miso is salty and pungent.  It is fermented soybean paste usually made in combination with a grain or bean.  It also comes in a soy-free variety made with chickpeas.  Originally from Japan, miso is high in protein, vitamin K, manganese, zinc, and fiber.

Known for making soup, miso is also delicious as a spread and in dressings, sauces, and sushi.  Miso paste provides a zest similar to sharp cheeses and can be blended with other ingredients to create a dairy-free spread.  Flavors of miso vary from light and delicate to dark and bold, each offering its own unique flair.
